In celebration of its fifth anniversary, COFE App, the leading online coffee marketplace in the region, is set to host the highly anticipated Al Hamra COFE Festival. The Lifecycle of Coffee..From Tree to Cup

Dubai – Qahwa World

The coffee tree, belonging to the Coffea genus, thrives in tropical climates between the Tropics of Cancer and Capricorn. Notable species include Coffea arabica (Arabicas) and Coffea canephora (Robustas). Arabica, characterized by large bushy growth, produces cherries with two flat seeds, commonly known as coffee beans. In contrast, Robusta, a robust shrub or small tree, yields smaller oval seeds and is resilient in hotter climates.

Temperature and altitude play crucial roles, with Arabica thriving in 15 to 24ºC conditions and Robusta excelling in 24 to 30ºC temperatures. Rainfall requirements range from 1,500 to 3,000 mm annually, with Arabica being less demanding. While Robusta can grow up to 800 meters above sea level, Arabica thrives at higher altitudes, often cultivated in hilly terrains.

Harvesting the Beans

Hand-picking is the norm for harvesting ripe coffee cherries due to the mountainous landscapes, except in Brazil where machinery finds utility. Pickers, every 8 to 10 days, meticulously select only fully ripe cherries. Arabica’s selective picking, though labor-intensive, is favored for its quality. Harvested cherries yield 2 to 4 kilos, and a skilled picker can harvest 45 to 90 kilos per day, resulting in 9 to 18 kilos of coffee beans.

Processing the Harvest

Post-harvest, the next step involves separating the coffee seeds from the cherries and drying them. Two methods prevail: the dry or ‘natural’ method and the wet method. The dry method, simpler and older, dries whole cherries in the sun for up to four weeks before further processing. The wet method involves pulping, fermenting, washing, and then drying the beans, which takes 8 to 10 days.

Roasting and Grinding

With over 1,000 aroma components identified, roasting conditions determine the final coffee flavor. Green coffee beans undergo roasting at 180ºC to 240ºC for 1.5 to 20 minutes, influencing color and aroma intensity. Roasting occurs in rotating drums or fluidized bed roast chambers, followed by cooling and potential packaging as whole beans.

Brewing and Consumption

Arabica dominates global coffee cultivation, spanning Latin America, Central and East Africa, India, and Indonesia. Robusta thrives in West and Central Africa, Southeast Asia, and Brazil. Different brewing methods, such as filter, plunger, espresso, Swedish, and Turkish, cater to diverse preferences. Instant coffee, made from roasted and ground beans, utilizes either spray-drying or freeze-drying methods.

Understanding Coffee Composition

Caffeine, antioxidants, and diterpenes contribute to coffee’s unique flavor and physiological effects. Caffeine, a mild stimulant, has desirable effects in moderation. Antioxidants, including chlorogenic acids, offer potential health benefits. Diterpenes, like cafestol and kahweol, present in oil, impact cholesterol levels, with brewing methods influencing their concentration.

Exploring Health Considerations

Coffee composition also involves compounds like Ochratoxin A, acrylamide, and furan, which require careful monitoring and adherence to safety regulations. Nutritionally, black coffee is low in macronutrients, providing only 1-2 kcal per 100 ml. Micronutrients like potassium, magnesium, and niacin vary based on preparation methods.

Coffee and Hydration

Black coffee, comprising over 95% water, does not lead to dehydration when consumed in moderation. Studies suggest that caffeine’s diuretic effects are outweighed by the fluid intake from coffee. Moderation, encompassing 3-5 cups per day, aligns with a balanced diet and active lifestyle, providing an enjoyable journey from tree to cup.

The International Coffee Organization and Specialty Coffee Association Join Forces to Elevate Global Coffee Industry

In a historic move for the global coffee sector, the International Coffee Organization (ICO) and the Specialty Coffee Association (SCA) have officially solidified their collaboration through the signing of a Memorandum of Understanding (MoU) at the ICO Headquarters in London. This groundbreaking agreement symbolizes a mutual commitment to advancing cooperation within the industry, with a focus on enhancing sustainability and education in specialty coffee.

Having fostered collaboration on various initiatives over the years, the ICO and SCA, bound by the MoU, are poised to leverage their combined outreach and expertise. This dynamic partnership aims to design and implement interventions that will benefit coffee stakeholders worldwide through knowledge-sharing, education, and capacity building. Training programs will be developed across diverse segments of the coffee value chain, encompassing production, trade, roasting, brewing, and preparation methods.

The MoU outlines a shared dedication to expanding market promotion and encouraging the consumption of high-quality coffee. Both organizations are committed to fostering constructive dialogue among ICO Members, industry experts, and coffee professionals. The collaboration will actively promote sustainable practices and increase visibility in specialty markets, emphasizing attributes, consuming markets, communication, and skill building.

A key aspect of the program is the empowerment of producer organizations to access specialty coffee and embrace higher-value trading models, facilitated by the use of the SCA Coffee Value Assessment and its tools.

Vanúsia Nogueira, Executive Director of the ICO, emphasized the importance of comprehensive training, stating, “Education and skills development are the keys to unlocking the full potential of our industry, ensuring a robust foundation for sustainable growth, fostering innovation, and empowering every actor in the value chain, from bean to cup.”

Yannis Apostolopoulos, Chief Executive Officer of the SCA, sees this partnership as a significant stride towards sustainability, creating new opportunities for knowledge transfer across the coffee sector. He expressed the SCA’s commitment to collaborative and diverse approaches, stating, “Collaborative efforts, like this partnership with the ICO, will play a crucial role in making the rewards of the specialty coffee segment accessible worldwide.”

With over 400 billion cups consumed annually, coffee has become more than just a beverage—it’s a catalyst for socializing, bridging gaps between friends, family, and colleagues.

Origins of Coffee & Social Rituals

Originating in Yemen and traded by the 15th century, coffee found its way to Persia, Egypt, Syria, and Turkey.
Public coffee houses, known as ‘Schools of the Wise,’ flourished in the Middle East during the 16th century.
These vibrant spaces served as hubs for music, performances, chess games, and discussions, shaping cultural and political landscapes.

Coffee’s Arrival in Europe

By the 17th century, coffee had journeyed to Europe, initially prescribed as a medicinal remedy. However, the emergence of coffee houses in Venice in 1683 marked a turning point. These establishments became pivotal in fostering intellectual exchange, transforming the 17th and 18th centuries in Europe.

Role coffe in Cultural and Political Transformations

European coffee houses played a crucial role in nurturing public opinion, hosting scholars, philosophers, antiquarians, and historians. These gatherings stimulated debates, shaped collective cognition, and encouraged the free flow of information, earning coffee houses the status of pivotal social meeting points.

Modern Social Networks

Even today, coffee houses remain gathering spaces, where people engage in spontaneous conversations, read, write, and entertain each other. Studies suggest that these spaces contribute to community values and social networks, fostering connections that extend beyond formal information transfer.

Beyond Coffee Houses: Social Evolution

The social aspects of coffee have transcended coffee houses to include homes, where coffee mornings bring friends and family together. Research hints at the potential cognitive benefits of social interactions, emphasizing the role of coffee in combating social isolation and encouraging community values.

Coffee in the Workplace

Coffee has seamlessly integrated into workplace culture, with the phrase “let’s have a cup of coffee” synonymous with initiating meaningful conversations. Coffee breaks provide essential downtime, offering moments for employees to form “communities of coping,” where they share both professional opinions and personal frustrations, fostering a supportive work environment.

 

What is PX Coffee and can it reshape the coffee industry?

For many individuals, excessive coffee consumption often leads to undesirable effects such as jittery hands, increased heart rate, and an underlying sense of anxiety—common symptoms attributed to high caffeine intake.

In a bid to sidestep these health concerns, many turn to decaf coffee. However, in recent years, a new player has emerged in the caffeine-free coffee scene: Paraxanthine, or Px, coffee. What exactly is Px, and could it reshape the coffee industry?

To uncover the answers, I engaged in discussions with Jeffrey Dietrich, the CEO of Rarebird Coffee, and Chahan Yeretzian, Professor of Chemistry and Head of the Coffee Excellence Center at the Zurich University of Applied Sciences.

Exploring the Essence of Px:

In straightforward terms, Px represents the primary product of caffeine metabolism. While coffee plants naturally synthesize caffeine from the organic molecule xanthosine, Px doesn’t occur in the plant itself. Scientists recreate Px in a laboratory setting by enzymatically breaking down caffeine—a process akin to the human liver’s function.

Notably, caffeine and Px function similarly within the body. Clinical trials from 1995 reveal that both substances inhibit adenosine receptors, leading to mental stimulation, adrenaline and dopamine release, and activation of the sympathetic nervous system.

Rarebird Coffee has taken the innovative step of introducing Px coffee to the market. Jeffrey elucidates that Px-infused coffee is practically identical to traditional coffee, brewed in the same manner and retaining the familiar aroma and taste. Px is introduced to high-quality decaffeinated beans during the roasting process.

Unveiling the Taste Profile:

Addressing concerns about flavor alteration, Chahan asserts that Px has minimal impact on coffee sensory profiles. Given the small quantities used, the influence on flavor is negligible. According to Jeffrey, Px is virtually indistinguishable from caffeine in terms of taste, maintaining the expected mouthfeel and organoleptic properties of coffee.

Rarebird collaborates with industry experts to source top-tier decaf options, currently offering a medium roast Colombian coffee with plans to expand their selection.

The Potential Benefits of Px Coffee:

Despite being a novel concept, Px coffee is backed by over a decade of in vitro and clinical trials showcasing various health benefits. These include increased brain dopamine levels, enhanced athletic performance, and improved cognitive measures. Rarebird’s 2023 study suggests Px as a potentially safer alternative to caffeine for similar stimulant effects.

Research indicates that genetics play a pivotal role in caffeine metabolism, affecting individuals’ responses. Px coffee may offer a different experience, particularly for those sensitive to caffeine’s adverse effects.

Navigating Potential Health Effects:

Clinical studies suggest limited negative side effects from Px consumption. However, it’s crucial to note that Px-infused products are synthetically produced. Jeffrey emphasizes that Px is not a foreign substance; our bodies are more acquainted with it than we might realize.

Chahan suggests that faster caffeine metabolizers may need a higher Px dose for similar effects. Px coffee doesn’t induce the same fight-or-flight response as caffeine, offering a distinctive experience.

Future Prospects for Px Coffee:

Given the surge in popularity of functional coffee, Px coffee has the potential for broader availability. Jeffrey reports positive feedback from consumers, with claims of improved sleep quality and the ability to enjoy coffee later in the day. Around 92% of Rarebird’s customers express feeling better with Px coffee compared to caffeinated alternatives.

Chahan anticipates the functional coffee market’s growth as consumers prioritize quality and health. While decaf remains a staple, the rise of half-caf and low-caf options indicates a shift in consumer preferences. As Px coffee unfolds, its impact on the industry may become more pronounced, with other roasters and companies exploring similar offerings. The future of coffee is brewing with exciting possibilities—let’s eagerly await what unfolds.

Last night marked a momentous occasion at the Mokha1450 Coffee Lounge, nestled in the heart of the Golden Mile on Palm Jumeirah, Dubai. The renowned boutique, led by Garfield Kerr, CEO and Founder of Mokha 1450, joined forces with Bethlehem Antonie, CEO and Founder of Kesha Coffee Company, to unveil their latest masterpiece – the Limited Edition Ethiopian Sidama Dela Coffee.

Guests at the event were treated to a unique tasting experience, curated by the visionaries behind Mokha1450 and Kesha Coffee Company. The highlight of the evening was the introduction of Ethiopian Sidama Dela, an exceptional coffee variety that promises a distinctive and unforgettable flavor profile.

The tasting session involved an intriguing experiment where attendees were presented with two unidentified coffee samples labeled A and B. Guided by their senses, participants sampled both brews and cast their votes for the preferred option. The revelation followed, with Sample A and B both unveiled as the newly launched Ethiopian Sidama Dela, with the difference being that sample A was sprayed with water before grinding the coffee. This experiment was based on a recntly published study on the effects of static electricity on the taste of coffee. The element of surprise added an extra layer to the experience, ensuring that those in attendance will forever cherish the memory of this unique encounter.

Originating from the Sidama Dela Village in Ethiopia, this limited edition coffee is curated by Kesha Coffee Company. Sourced from micro-lot farming families at an elevation of 2100-2250 meters above sea level, the Heirloom varietal undergoes a meticulous natural anaerobic processing method.

Brazilian café chain The Coffee is preparing to enter the Middle East via Dubai

The Brazilian café chain “The Coffee” is preparing to enter the Middle East region through Dubai in the United Arab Emirates, as it is scheduled to launch its first branch in Dubai in 2024, and then it will launch its operations in both the Kingdom of Saudi Arabia and the Arab Republic of Egypt.

In a sign of the increase in coffee consumption and the great potential for growth in the coffee market, The Coffee will begin opening two branches in Dubai, before moving to the rest of the region.

TheCoffee CEO Carlos Vertonani described Dubai as a “strategic” market due to rising coffee consumption and “expansion potential.”

The Coffee will also open its first branches in Saudi Arabia and Egypt within the first six months of next year, as the brand adopts its presence in the Middle East to focus on small format stores that mostly serve mobile commerce.

Founded in 2018, The Coffee currently has 200 branches in Brazil, in addition to 23 branches in Colombia, Peru, Chile, Spain, Portugal and France.

The Coffee completed a $7.5 million investment round in January 2023, and raised an additional $10 million in October 2023 to facilitate its entry into the Middle East and expand its presence across South America and Europe.

The small-format coffee chain aims to open 1,500 stores outside Brazil by 2028, with an additional 12 stores opening before the end of this year, and a total of 35 stores planned to open in the first six months of 2024.

In this exclusive interview, Jane shares her evolution from a barista to a coffee trainer, her experiences and challenges in the national competition, and the significant milestones that define her flourishing career in the coffee industry.

 

  • Introduction and Background:

Can you tell us a bit about yourself and how you got started in the world of coffee?

I’ve spent 8 years in the specialty coffee industry, transitioning from a barista role to becoming a coffee trainer of Behind the Cup (Hoof Cafe and The Hut). I was introduced to specialty coffee by Fred, who took me to work at Stomping Grounds in Jumeirah 8 years ago – a specialty coffee hub.

  • UAE Coffee Championship 2023: 

Congratulations on winning the third place in the 2023 UAE Coffee Championship! Can you share your experience participating in the competition and what this achievement means to you?

As my first time participating in the National Competition, it brought a mix of excitement and fear. The competition featured the strongest lineup, making it quite challenging. Securing the third position is of great significance for me, as the achievement is not solely my own but a collective result of the support I have received from my team since the beginning.

How does it feel to win the third place in the 2023 UAE Coffee Championship?

It felt amazing! Winning third place exceeded my expectations. Being in the top 6 already made me very happy. I feel blessed to have had a team supporting me throughout this journey, and I owe this achievement to them.

Can you share some insights into your competition journey and the challenges you faced?

I’ve been attempting to enter the competition since last year, but unfortunately, I couldn’t secure a spot despite being prepared. So this year, I took a chance and registered. To my surprised I got in, but I got less than two weeks for practice and preparation, but it was all made possible because of the team. What motivated you to participate in barista competitions, and how do you prepare for such events? Being surrounded by individuals engaged in coffee competitions has fueled my desire to embrace the challenge. Witnessing how these people utilize this platform to influence and inspire the coffee community is amazing.

Are there any specific moments or aspects of your routine that you find particularly challenging or rewarding during competitions?

The challenge lies in achieving consistency in flavor, mastering brewing techniques and communicating the story behind the coffee selection to the judges and of course, the technical precision.

  • Signature Drinks and Techniques:

Can you share some details about your signature coffee drinks or unique techniques that you showcased during the championship? 

I’ve showcased a coffee from Jose Luttrell of Abu Coffee in Panama. It’s a Gesha Variety, anaerobic natural processed, with prominent notes of Strawberry, Peach, and Sweet Orange. I have used a flat bottomed immersion dripper called Trio Immersion as it allows a greater control throughout the brewing process which can lead to a more consistent, even extraction and well balanced cup.

  • UAE LAGS Battle Red Jug Champ 2022:

Winning the UAE 2022 Latteart Grading System Battle Red Level Category is remarkable. Can you tell us about the competition and the inspiration behind your winning performance?

Joining was not part of the plan. I was encouraged by a friend to participate. Basically, its a latte art throwdown where designs are assessed based on symmetry, contrast, and how identical to the chosen pattern using a grading system. It was luck!

  • Barista of the Year Award 2021:

Being awarded the Barista of the Year Award21 is a significant honor. What does this recognition represent for you, and how did you approach the competition to stand out among other talented baristas?

Receiving the Barista of the Year Award highly commended in 2021 by Caterer Middle East Awards is an honor. It signifies not only personal achievement but also recognition within the industry.

Processing and SCA Barista Professional Certification:

As a certified Q Processing Professional and SCA Barista Professional, how have these certifications influenced your career in the coffee industry?

In what ways do you apply this expertise in your role as a barista and trainer? With Q Processing certification, you gain a deep understanding of the coffee bean journey from harvest to processing, which can contribute to better quality control. As an SCA Barista Professional, you refine your skills in brewing and extraction ensuring a better coffee experience for customers. By sharing this expertise, it can elevate the overall quality of coffee preparation across teams.

  • Training and Mentorship: 

As a certified trainer, how do you approach training and mentorship in the coffee industry? What aspects of your knowledge and experience do you prioritize when guiding others?

Prioritizing an understanding of coffee origins, flavor profiles, and customer preferences. I also focus on emphasizing key aspects on brewing methods and sensory analysis. Coffee Quality Institute Certification: Being certified by the Coffee Quality Institute is a significant accomplishment. How does this certification contribute to your understanding of coffee quality, and how does it impact your daily work? Being certified by the Coffee Quality institute enhances your ability to assess factors like flavor profiles, bean quality and processing methods. It positively influences my daily work by having a guide and reference for evaluating and ensuring high-quality coffee for our customers.

Balancing Competitions and Training: Balancing competitive events, training, and work can be challenging. How do you manage your time and energy to excel both in competitions and in your role as a barista and trainer?

Prioritize tasks, create a schedule, and allocate dedicated time for each activity.

  • Future Plans and Goals:

What are your future plans and goals within the coffee industry? Are there specific competitions, projects, or areas of expertise you are looking to explore in the coming years?

I plan to obtain my AST certification next year. I also intend to delve deeper into coffee quality courses.

  • Advice for Aspiring Baristas:

For aspiring baristas or individuals looking to enter the coffee industry, what advice do you have based on your experiences and journey in the field?

Invest in yourself, by engaging in trainings and workshops and etc—as it yields the highest returns on your personal and professional growth.
