Emirates National Barista and Latte Art Championships Converge at ‘World of Coffee 2024’ in Dubai

The World of Coffee 2024 is set to hold two national championships – ‘UAE National Barista Championship’ and the ‘UAE National Latte Art Championship’ — from January 21-23 at Dubai World Trade Centre.

The third edition of the event, targeting industry professionals, is being organised by DXB Live, the integrated event management and experiential agency of Dubai World Trade Centre (DWTC), in collaboration with the Specialty Coffee Association (SCA).

The UAE National Barista Championship will convene the country’s skilled coffee preparation and presentation professionals under one roof, where the best baristas in the UAE will showcase their talents and capabilities before a diverse audience, including experts, specialists, and enthusiasts.

An international team of judges will evaluate the participants based on the quality of the beverage, presentation technique, creativity, and technical proficiency.

The championship aims to underscore the barista profession and elevate the level of excellence in the coffee sector by offering experts the opportunity to exhibit their skills and innovative approaches.

The event will also set the stage for the ‘World Barista Championship’, one of the most renowned international coffee competitions, in which winners of the national barista championships held across the globe will compete on a global level.

The ‘UAE National Latte Art Championship’ will exhibit the artistic and creative capabilities of baristas in the preparation of lattes. During the competition, a judging panel will evaluate entries based on visual and creative aspects, with a key focus on diversity in styles and overall taste.

The championship will be conducted following the specific judging rules, regulations, and standards used in global coffee events.

Khalid Al Mulla, Chief Executive Officer of the Specialty Coffee Association – UAE Chapter, said: “Such tournaments and competitions signify our vision to position Dubai as one of the most active regional centres for fostering innovation and excellence in the coffee sector and offering a dynamic platform for skilled individuals to exhibit their expertise in the field as well as to elevate barista techniques and skills.

Besides these activities, the World of Coffee Dubai will also be hosting two other competitions, namely ‘Coffee Design Awards’ and ‘Best New Product’. These competitions aim to recognise and celebrate innovation, promote collaboration, and explore industry prospects.

The ‘Coffee Design Awards’ will showcase participants’ inspiring designs, including packaging, designing brand logos, equipment, and space decor, evaluated by an expert panel. The ‘Best New Product’ competition highlights innovative and high-value new products in the coffee industry.

Furthermore, the exhibition will feature a wide array of events and activities, including ‘Roasters Village’, ‘Cupping Room’, and ‘Brew Bar’.

A new study reveals the secrets of making coffee better

For years, coffee aficionados have speculated that a simple addition of water to coffee beans before grinding could elevate the coffee experience. Now, a recent study conducted by researchers at the University of Oregon not only validates this belief but also sheds light on the science behind it.

The research delves into a technique initially aimed at minimizing the mess associated with grinding coffee, particularly the airborne particles caused by static electricity during the grinding process. According to Christopher Hendon, an associate professor of computational materials chemistry at the University of Oregon, the addition of water acts as an insulator, reducing static electricity’s impact—an effect known as the “Ross droplet” technique.

Originally conceived as a solution to the messy aftermath of coffee grinding, this method evolved into a sophisticated approach to enhance the brewing process. By addressing static electricity, water prevents microscopic clumps from forming during brewing, a factor that can hinder flavor extraction.

The study, published in the journal Matter on December 6, employed innovative techniques, including tools designed for measuring electric charges on wildfire and volcanic ash, to explore the potential benefits of adding water to coffee beans. The researchers meticulously measured coffee, ground it using a professional grinder, and assessed the impact of water on static charge.

The results indicate that even small amounts of water, ranging from a single droplet upwards, deactivate the static charge, ensuring that the coffee exits the grinder without being charged. This, in turn, prevents the formation of clumps during brewing, leading to higher extraction yields and a more consistent brew.

While the ideal amount of water may vary based on factors like roast type and grind coarseness, the study found an average increase in extraction yield by 10%. While this might not always translate into a noticeable flavor difference, it does underscore the efficacy of the “Ross droplet” technique.

Despite the potential benefits, the study acknowledges that the improvement in cleanliness is universal across all brewing methods, whereas the brewing benefit is more pronounced with espresso and, to a lesser extent, filter coffee. Other methods like cafetiere, French press, or AeroPress, which require a coarser grind, see minimal changes.

While the study has received positive feedback for its attempt to demystify the process, some experts call for further testing with different grinder models to draw more conclusive evidence. Ultimately, the findings open a new chapter in understanding the intricate process of grinding coffee and hint at the possibility of future technologies centered around the powerful technique of adding water on demand.

“With drinks and snacks becoming must-have items with cool currency, coffee has become a steady go-to as a vehicle for affordable luxury and lifestyle expression,” Claire Lancaster, head of food and drink forecasts at consumer and product forecasting company WGSN, told CNBC.

“We’ve seen a trend over time towards premiumization,” she explained, adding that this has been reflected in a growing preference for higher quality coffee, both in how it is brewed and where it originates from, as well as different types and flavors.

The Bean Shop, an artisan coffee roastery in Scotland that offers online ordering, has noticed a surge in customers.

“There has a been a big increase in people making speciality coffee at home,” one of it’s owners, Lorna Bruce, told CNBC. “People love to try something new.”

Elsewhere, AeroPress, a company that produces popular coffee makers, told CNBC that it has seen sales increase, as well as a “dramatic” rise of interest from second-party retailers. In the past year, the company has gained two major retail partners including Walmart
, Chief Marketing Officer David Cole told CNBC.

As consumers pick up new ways of brewing, they continue buying the necessary accessories like filters, Cole added.

In the U.K., AeroPress sales between December 2022 and December 2023 grew by 40%, and the company now distributes its products to over 400 retailers like roasters and small coffee shops, a company representative said.

Besides AeroPress, other popular coffee-making methods include pour-over or drip coffee makers (like V60s or Chemex coffee makers) as well cafetières and moka pots that boil coffee on the hob.

Many of these methods are historically popular in certain regions, like cafetières in France and moka pots in Italy, but have recently gone global.

How coffee became cool

But how did coffee go from a standard, easily accessible caffeinated drink to being a major trend? Well, the Covid-19 pandemic and resulting lockdowns appear to be one reason.

“Lockdown meant people took the time to make the drinks that they’d normally get on the go,” the Bean Shop’s Bruce said.

“Customers tell us that they ‘can’t drink supermarket coffee now’ and they have gotten used to the freshly roasted flavors and aromas you get when coffee is brewed within a couple of weeks of roasting,” she added.
Consumers also appear to value small things like coffee drinking more now, Melanie Birnbaum, chief brand officer at Nespresso, told CNBC.

“Recent years have reaffirmed the value in simple pleasures and little luxuries like a cup of coffee,” she said, adding that this has prompted consumers to seek out higher quality produce.

“At the same time, some of the creativity and sense of exploration is being driven by social media, where new and inventive recipes are shared on TikTok,” she added.

WGSN’s Lancaster has also identified social media as a key driver of coffee’s coolness.

“Gen Z and TikTok are shaping coffee culture,” she said, pointing out that certain hashtags like #CoffeeTok have grown significantly in the past year.

There is also some overlap with the pandemic. For example, trendy coffee drinks like the Dalgona coffee (which involves whipping coffee powder, water and sugar to create a cream-like substance before adding milk) went viral on social media in 2020.

Coffee trends ahead
Social media is also a driver behind some of the trends that are on the horizon for coffee, Lancaster noted, as brands gain traction there if they have a “cool” element to them — and new coffee-making methods are shared frequently.

Another key trend ahead is coffee with add-ons that are designed to boost wellbeing and health, Lancaster pointed out. This has even reached large companies like Nespresso, which has launched blends enriched with Ginseng or vitamin B12 – or “functional coffee” as Birnbaum calls it.

“Some people are looking for something extra in their day,” she said. “These blends have added wellbeing benefits like vitamins or extra caffeine.”

Other growing trends include specific coffee styles being exported from their traditional markets, like Vietnamese coffee, made with condensed milk, and Indonesian Kopi coffee, which is based on partially digested coffee cherries, Lancaster explained.

And of course, innovations to at-home brewing devices and technologies aren’t going anywhere either, Lancaster added.

China’s Surging Coffee Culture Sparks Intense Competition Among Global and Local Chains

Chinese coffee consumption is growing quickly, spurring cut-throat competition between local and foreign coffee chains that have opened thousands of branded shops in recent months and surpassed the number of coffee stores in the United States.

Analysts expect China’s growing thirst for coffee to be a key driver of future demand for the beans as coffee shops expand beyond Beijing and Shanghai to dozens of mid-sized cities where young professionals have warmed to the beverage.
China’s rising coffee demand is an opportunity for international chains like Starbucks and Tim Hortons that are investing heavily in China, though they face a steep challenge from rapidly expanding local brands.

Data from the International Coffee Organization sent to Reuters shows coffee consumption in China grew 15% in the year-long season ended in September from the previous cycle to 3.08 million bags.
“The Chinese consumer is increasingly adopting Western life styles and coffee is obviously one of the beverages that represent that,” said Jason Yu, greater China managing director of market research firm Kantar Worldpanel.

The number of branded coffee shops in China grew a staggering 58% in the last 12 months to 49,691 outlets, according to Alegra Group, a company that tracks growth of coffee chains.
There is harsh competition between the local chains and international chains, said Matthew Barry, a beverages analyst for Euromonitor. Each one is trying to grab as big a share as they can of the growing market, he said.

Alegra Group estimates China’s Luckin Coffee (LC0Ay.MU) added 5,059 stores in the last 12 months, while another Chinese chain, Cotti Coffee, opened 6,004 outlets in the period.

“The scale of the opportunity is such that both (local and international chains) will have to be very aggressive in facing off against the other and I think that should ensure a very dynamic marketplace in the next few years,” Barry said.

U.S.-based Starbucks (SBUX.O) opened 700 stores in China in the last year and said it is on track to operate around 9,000 stores in the country by 2025, while Canada’s Tim Hortons plans to have 3,000 stores in the country in four years.

Seizing market share is one of Luckin’s core targets, Chief Executive Jinyi Guo said during the firm’s third quarter earnings call.

Store openings are now happening in China’s smaller cities, Jason Yu said, which still have millions of inhabitants each.

“So that basically means in those places there’s still a lot of white space for coffee chains to grow,” he said.

Zixi Zhao, a 20-year old Beijing student, said he drinks coffee every day.

“I started drinking when I went to college,” he said. “I don’t drink much tea in general, but my mom, my dad, my grandmother they all drink tea.”

Ruoxuan Zhao, a 19-year-old student from Beijing, said drinking coffee was part of the fast-paced lifestyle of young people in China, who welcome the caffeine boost.

The development is good news for coffee producers already benefiting from high prices due to adverse weather in some growing regions. Arabica coffee futures are trading near the highest in eight months, while robusta coffee hit the highest in 15 years last week.

China imports coffee mostly from Africa and South America.

Brazil’s coffee exporters group Cecafe said that shipments to China will nearly triple in 2023 to surpass 1 million bags for the first time, making China its eighth-largest market.

The United States Department of Agriculture sees China using 5 million bags of coffee in the new season (2023/24), which would make it the world’s seventh-largest consumer.

Chinese coffee consumption still pales when compared to top consumers the United States and Brazil that use more than 20 million bags per year. But the growing demand signals China is undergoing a cultural change similar to other tea-loving Asian countries including Japan and South Korea.

Dismissing the impact of global events, economic transformations, and climate issues on the local coffee industry, Lameen Abdul-Malik anticipated an increase in coffee-related activities in the UAE. However, he expressed concerns that the awareness generated within the coffee community is insufficient to reach the broader populace. Looking ahead, he expects rising prices and climate change to impact coffee prices, presenting challenges and opportunities for companies to invest in ethical sourcing and customer education.

Turning to Federico Ortile, CEO of Simonelli in the Middle East, his portrayal of the coffee scene in the Emirates highlighted a notable shift in consumer preferences, especially among young people. These individuals are inclined towards innovative preparation methods and flavored coffee. Federico Ortile emphasized the digital inclination of young people in the UAE, leading to trends such as online delivery, cloud kitchens, and dark stores gaining traction. Federico Ortile underscored the technological advancements in coffee brewing, citing innovations like “PureBrew” from the “Victoria Arduino” company. Furthermore, developments in milk steaming technology, such as the Easy Cream steam wand, have simplified and standardized the milk steaming process, ensuring safety for baristas.

World Coffee Research Launches Open-Access Database for Arabica Coffee Genetic Fingerprints

In a historic move for the coffee industry, the World Coffee Research(WCR) announced the launch of an open-access database for the genetic fingerprints of Arabica coffee in August 2023. This groundbreaking initiative is designed to streamline and cost-effectively authenticate Arabica coffee varieties, significantly contributing to the quality assurance of plant material available to farmers worldwide.

Employing 45 single nucleotide polymorphism (SNP) molecular markers, the database creates a unique genetic fingerprint for 23 of the most prevalent coffee varieties in Latin America’s commercial production. These strategically placed SNP markers offer a swift and cost-effective method of analysis, addressing a persistent challenge in the coffee industry.

The reference database, meticulously validated and enhanced by the World Coffee Research(WCR), incorporates over 30,000 leaf samples collected from six countries between 2021 and 2023, establishing a robust foundation for accurate variety authentication.

Variety authentication is particularly critical in the evolving seed sector, where low-cost tools are indispensable for maintaining stringent quality control in seed collections and nurseries. Shockingly, prior studies by theWorld Coffee Research(WCR) revealed that 39% of tested trees did not match the expected genetic profile of their designated variety, underscoring the economic risks faced by farmers relying on inaccurate information.

Dr. Jennifer “Fern” Long, CEO of the World Coffee Research(WCR), underscored the significance of this breakthrough, stating, “This unique announcement brings new technology to coffee to dramatically reduce quality control costs to ensure the future of coffee farming.”

The announcement of the database to the scientific community, including public and private laboratories, aims to facilitate widespread adoption. Its accessibility empowers stakeholders across the coffee sector, from financiers to implementers, farmers, and public institutions, enabling them to benefit from the cost-effective diversity validation it offers.

To ensure immediate access to this service, the World Coffee Research(WCR) has collaborated with Intertek AgriTech, an ISO-certified quality assurance laboratory based in Sweden, to validate and enhance the database and technical protocols. This collaboration guarantees the effective use of markers in high-volume applications, typically involving a minimum of 376 samples.

The database’s impact is already evident in projects such as the National Regeneration Plan in El Salvador, where an SNP panel is being utilized to validate the health of trees distributed to farmers.
By ensuring the genetic purity of planted trees, the country aims to produce more than 150 million plants in the next decade, stimulating economic growth and supporting the livelihoods of coffee producers.

The World Coffee Research(WCR) plans to continually update the database and add fingerprints for additional varieties in the coming months and years. By providing affordable genotyping services, this database signifies a major leap forward in the coffee industry, contributing to the documentation of specific Arabica coffee varieties and establishing a foundation for value creation.

The database is available for open download under the Creative Commons Zero (CC0) framework. Researchers and commercial genotyping providers are encouraged to utilize this resource to enhance the validation of specific Arabica coffee varieties.

As the global coffee community embraces this technological leap, it holds the promise of reshaping the coffee growing landscape. The implications extend beyond the scientific sphere into the economic and social spheres, affecting farmers, producers, and consumers alike.
