The Coffee Value Assessment Course for Cuppers is designed as a comprehensive professional update for coffee cuppers seeking to enhance their skills. Focused on introducing participants to the Specialty Coffee Association’s (SCA) innovative Coffee Value Assessment (CVA) tools, the course combines hands-on activities, lectures, and discussions.

General Objective: Upon completion of the CVA Course for Cuppers, participants will proficiently use and integrate the SCA’s Coffee Value Assessment tools into their cupping practice.

Specific Objectives: After completing the course, participants will be able to:

  • Identify and use the new CVA sensory references.
  • Explain the function and background of key sensory assessment tools, such as 15-point intensity scales, CATA lists, and hedonic scales.
  • Utilize the CVA Descriptive and Affective Forms to describe and evaluate coffee.
  • Understand and apply the new CVA system, encompassing descriptive, affective, and extrinsic evaluation tools.

Who Should Attend: The course is tailored for current cuppers who use the 2004 SCA cupping protocol, including Professional cuppers, Q Arabica Graders, or former Q Arabica Graders. Individuals who employ the SCA cupping system at least once a month or have done so intensively in recent years will find value in this course.

Certification: Participants will undergo four tests, including a written exam, identification of olfactory references, descriptive assessment, and affective assessment. Successful completion of all tests will earn participants a certificate, verifying their proficiency in CVA as a professional tool.

Saudi Shada Mountains’ Timeless Coffee Legacy: A Fragrant Brew from 150-Year-Old Trees

In the highlands of Al-Baha, the Shada mountains enchant with the captivating aroma of coffee wafting through the air. Nestled on Shada Al-Asfal and Shada Al-Ala, coffee shrubs yield a distinct bean that has become a highly sought-after commodity in the country.

These mountains host farms boasting over 54,000 trees, collectively producing more than 12 tons of coffee annually. In this thriving enterprise, over 280 farmers contribute to the cultivation, according to statistics from the Ministry of Environment, Water, and Agriculture branch in Baha.

As part of a mountain range surrounded by low plains and valleys, the twin peaks of Shada Al-Ala and Shada Al-Asfal stand as the highest in the Tihama plain. Reaching elevations of 2,200 meters and 1,500 meters, respectively, these mountains serve as the backdrop for the cultivation of various crops, with coffee reigning as the primary one.

The care for the coffee trees is remarkable, employing innovative methods such as collecting rainwater in hollow rocks strung together to resemble tanks, as highlighted by Ali Al-Ghamdi, the owner of a farm on Shada Al-Asfal mountain, where 700 Shada coffee trees thrive under meticulous care.

Shada coffee, priced between SR100 ($26) and SR150 per kilogram, bridges tradition and modernity, with trees that have stood for over 150 years still yielding coffee. Abdullah Al-Shadawi tends to around 300 of these ancient trees, following in the farming footsteps of his ancestors, emphasizing the significant yield due to the fertile soil.

Fahad Al-Zahrani, director of the ministry’s Baha region, underscores the government’s substantial support for farmers, distributing 80 liters of insecticides annually and implementing a reclamation project for agricultural terraces on both mountains. With 125 agricultural terrace reservoirs established, the ministry’s Coffee City project in the north of Baha covers 1.6 million square meters, aiming to create 1,000 jobs and ensure the cultivation of 300,000 coffee trees. The Shada Mountains stand not just as a geographic marvel but as a testament to a timeless coffee legacy.

Over the past 12 months, the market has experienced robust sales growth of 8%, contributing to a 4% increase in net outlet growth. Projections for the next year anticipate total sales exceeding $52.4 billion, with a further surge to $61.6 billion by 2028, driven by the thriving coffee-focused segment.

Leading the pack, Starbucks maintains its dominance with 16,144 stores, constituting 40% of the total market share. Dunkin’ follows with 9,434 stores, while Panera Bread, despite closing 22 sites, operates 2,151 stores.

Despite the overall positive trend, 19% of operators admit to struggling with the lingering effects of pandemic-related trading pressures, emphasizing the challenges still faced by some players in the market.

UK-based specialty coffee chain, Black Sheep Coffee, is gearing up for international debuts in the United States and the United Arab Emirates (UAE) following a remarkable doubling of its annual sales in 2022. The robusta coffee specialist achieved a 99% increase in turnover, reaching £21.3 million ($27 million), as it continued to scale across the UK and prepare for global growth.

Despite the impressive sales growth, Black Sheep Coffee reported a pre-tax loss of £5.8 million ($7.3 million), attributing it to store expansion and rising costs, which surged from £7.6 million ($9.6 million) to £14.5 million ($18.3 million). The company remains resolute in its commitment to enhancing customer service, expanding the store network, and developing its franchise business, as indicated in its recent filing with Companies House.

Korean Researchers Create the First Certified Reference Material for offee Beans

The Korea Research Institute of Standards and Sciences (KRISS) has introduced the world’s inaugural certified reference material (CRM) for coffee beans. This groundbreaking development enables precise measurement of five nutritional components (calcium, magnesium, iron, zinc, and copper) and three detrimental elements (lead, mercury, and cadmium) within the dehydrated fruit.

The Inorganic Metrology Group at KRISS initiated the project by freeze-drying a batch of raw coffee beans, then grinding and blending them to create a uniform sample, which was further sterilized through irradiation.

Adhering to domestic Korean regulations, roasted coffee, instant coffee, and other coffee products are required to have a total lead content of 2 mg/kg or less. Meanwhile, European standards stipulate that dried edible coffee beans should contain 0.05 mg/kg or less of cadmium, with lead content restricted to 1 mg/kg or less.

Utilizing isotope dilution mass spectrometry for measurement, the new CRM boasts an accuracy level more than three times superior to conventional methods employed by food testing institutions. Dr. Kyoung Seok Lee, the Director of the Division of Chemical and Biological Metrology, anticipates that the CRM could substantially elevate the quality control standards for coffee—a widely consumed and heavily imported beverage.

KRISS aims to extend its CRM development to other food items, including Korean cabbage, blueberries, and pork, contributing to the creation of healthier and safer dining options for the nation.

In South Korea, the per capita coffee consumption of the adult population is 2.7 times higher than the global average. Coffee imports (raw and roasted beans) reached a record high of 200,000 tons in 2022.
